Because it became very expensive when the word got out about the health benefits.
I was working with Whole Foods at the time and everybody was asking for it.
So the demand pushed the price way up.

Where did that urban myth about coconut oil being good for you come from? Quite the opposite. Coconut oil is extremely high in saturated fat. It is not good for you. It was used to make popcorn because it is cheap. They switched to a liquid oil because it is healthier. This story got turned upside down.
